Designer droplets with 'pupils' open a world of possibilities

Norwegian researchers have discovered a surprisingly simple way to use electric voltage to control surface properties and create emulsions with droplets. Their findings, published in Nature Communications, could have implications for everything from food preparation to oil and gas production.
